The signature Hainanese burrata, inspired by Singaporean chicken rice, fried chicken with a shatteringly crisp coating that doesn't soak into the meat, and a kinilaw made with seasonal scallops.
Heads up: The three peanut-and-chilli sauces and the fried chicken start out delicious, then build to a 'blowtorch in your mouth' level of heat.
The Hainanese burrata with kecap manis, ginger, spring onion and chili oil was a combination they'd never seen before and it worked beautifully, while the crispy ulo (pig's head) was the crunchy, juicy showstopper.
Heads up: This is Filipino food, not French, and the creators admit they're 'a little biased.'
