Said the sardine bone broth was intensely rich and umami-packed without any fishy taste, and the noodles — made with wheat from Champagne's own fields — had excellent chew.

Heads up: Popular ingredients like the sardine fillet can sell out, and the classic tonkotsu-style broth is served at a different location.

The interior and atmosphere, recreating a Tokyo back-alley (yokochō), were called the best of the three — 'worth it for that alone' — and the torch-seared chashu had good barbecue flavor, with bamboo shoots that were also enjoyed.

Heads up: You need to join an online waitlist, and on a Sunday the wait exceeded 1 hour 50 minutes (made worse since one of the two branches was closed); the chicken broth was too bland and the marinated egg far too salty, leading to the comment 'I wouldn't wait two hours again for this ramen.'
